Biography

Tonna Anyasi, PhD is presently a Postdoctoral Research Fellow at the Department of Food Science and Technology, School of Agriculture, University of Venda, South Africa. Dr Anyasi specializes in phytochemicals of plant origin, their antioxidant and inhibitory effects in vitro, chemistry and digestibility of starch, postharvest storage, preservation and processing of fruits, vegetables, roots and tuber crops. Dr Anyasi is presently investigating the the inhibitory activities of bioactive compounds and their roles in the bioaccessibility in vitro of selected nutrients in fruits and vegetables. Dr Anyasi obtained his PhD in the University of Venda, South Africa and his Masters degree at the University of Ibadan, Nigeria.
